Cucumber Tomato Basil Shrimp Boats

Now, what about these cucumber shrimp boats? Here you go - slice cucumbers in half, and spoon out the insides (I use the insides for my tuna). Dice veggies of choice, and season with tomato basil along with shrimp. Saute in olive or avocado oil until done. Fill cucumbers with brown rice, and top with shrimp and veggies. 😋


P.S. I used red onion and zucchini. I also drizzled Sriracha hot sauce on one.


P.S.S. I purchased tomato basil seasoning at dollar tree. Can be found at Wal-Mart as well.
