Meatless Roasted Acorn Squash

Another yummy to add to your lifestyle. Preheat oven to 400 - cut squash in half and remove seeds. Lube with avocado or olive oil, and sprinkle a little salt and pepper. Roast for 40 min and add your choice of fillings. I sauteed red onion, bak choy, kale, baby portobello mushrooms for about 5 min, then I added 1 can of black beans (drained), and 1 can of fire roasted potatoes. Let it simmer for about 5 minutes, and filled my squash. 😋


P.S. I uses smoked paprika and garlic and herb seasoning when I sauteed my mix.
