Heat a pan/skillet with avocado or olive oil, and add 2 eggs, spinach, mushrooms, roma tomatoes, cilantro, and jalapeños - desired cook time to your liking. I added a little salt, garlic and onion powder. Serve over some leftover jasmine rice (fistful size). 😋
