Pleeeeeaassseeee add this to your lifestyle because it will change your life! Preheat oven to 425, and cut acorn squash in half. Remove the guts, wash and pat dry. Dash on black pepper, a little salt, and paprika - lube with olive oil or avocado oil.
Roast for 30 min, and cook protein (I used 93% lean ground beef). Season with paprika, onion powder, garlic powder, and chili powder. Add diced onion of choice, canned tomatoes, reduced sodium canned black beans (drained), and jalapeños. When done, remove squash and fill with mix.
P.S. I consumed one with plain Greek yogurt (a great substitute for sour cream. This brand is my go to because it has the same consistency as sour cream).
